It has been historically ‘sought after’ for its medicinal value, and was probably brought to Europe by the Spanish, at a time when they were being unkind to the local population there. It proved to be an effective treatment against malaria, which made it of great economic and political importance.

Whenever you feel a chest cold coming on or just feel grotty, make your own Quinine. Put a glass lid on your pot if you have one – (a metal one is OK if you don’t) – and let it simmer for about 2 hours.

Do not take the lid off the pot until it cools completely, as this would allow some Quinine essence to escape in the steam.

You can sweeten the Quinine ‘tea’ with honey or sugar since it does taste bitter. Take 1 tablespoon every couple of hours to bring up phlegm from your lungs.
